It was exquisite and exactly what I needed. We all need to get away once in a while: Away from the hustle and bustle, the commute, the office, the job, the work, the race, and just take time to relax. Our retreat was in a beach house and it couldn’t be more perfect.
We spent our days, talking, joking, singing together, dining, exploring, enjoying nature and even fitting in time for a steam and a massage at a spa. Overall it was a great experience and I highly recommend everyone do it at least once a year.
I find that in the warm summer months I enjoy making lighter, cold, healthier dishes. To go along with the longer, warmer, brighter summer days and the extended time spent outdoors, I like to make more salad type entrees.
The high blue sky, walks by the ocean, the birds singing, morning coffee outside on the back deck, are all things I enjoy in Summer, along with cold dishes. This week I made a cold seafood salad with salmon, giant prawns, capers, chopped onions, green olives, roasted red pepper and balsamic. Enjoy!
Here in the Northwest of the United States, our summers can come late, end early or be full of precipitation. But this summer has not disappointed. It has come early, continues to burn hot, and shows no signs of ending early. It is a time for road trips, hiking, exploring, camping, spending time at the beach, on the water and together, eating outside and enjoying time on the deck as much as possible.
As we continue to enjoy time outside and this pristine weather, we remember that family is important and that family must always come first. It is family that we work for, get up every morning and go to our jobs, save up, pay for benefits and plan for the future. Without family, fun in the sun this summer and every summer just wouldn’t have any meaning.
Get out there and enjoy the summer fun with your family!
This is our McMenamin’s Gearhart Hotel that we are staying at on the beach in Seaside, near Cannon Beach. We walk to the beach every day and golf in the afternoon. The golf course, which is also just outside our hotel, only a short walk away, is one of the oldest in America. And the hotel is run by McMenamin’s so you know it is good! They have great food, art, and just like me, they brew their own beer, wine and cider!
We had a delicious time at the beach, going in the warm water, walking on the warm sand, soaking up the sun and enjoying the great sand art at the Sandcastle festival. It is a great way to spend Father’s Day and to celebrate graduation.
My Summer Book Signing Series — Session One, is tomorrow at McMenamin’s Gearhart Hotel near Cannon Beach in Oregon, U.S.A.!
